Cooking with the California Cajun” is a cookbook written by a Cajun from the heart of the Cajun area of Louisiana. The author, Lanny Kilchrist, is a graduate of The University of Southwestern Louisiana now University of Louisiana at Lafayette.

The cookbook’s purpose is to preserve old family recipes that otherwise would have been lost. The recipes are directed to incorporate the basic and most popular Cajun/Creole recipes of Southern Louisiana. You will also find recipes that the author has designed and other various recipes from friends and sources that were deemed worthy to be included in the book. You will find that making dishes from this cookbook will, in a small way, bring you into the very heart of the Cajun world and will certainly please the palate!
